Product details
Our Kerala beef pickle — pothirachi achar, or erachi achar as many homes call it — depends on the cut. The wrong meat stays tough and chewy however long it sits in masala, while the right cut turns tender and soaks it all in. We make ours in Wayanad from fresh beef only, never frozen, cut by hand into pieces that pickle well and cooked down slowly in our own masala and premium gingelly oil.
Every batch is capped at 50 kg so we can taste it and correct it before it ever reaches a jar.
⸻
Frozen meat loses its moisture and turns dry and fibrous in a pickle. Fresh beef stays tender and takes the masala in.
Not every cut pickles well. We choose the ones that stay tender and trim them by hand, so every spoon gives you a proper piece of meat.
Small enough to taste and correct. It’s how the jar you open next month tastes like the one you opened today.
A meat pickle needs a different blend from a fish pickle. We build each one ourselves.
Built to taste of the beef — not of salt and oil.
